S’ghetti To Go’s Signature Spaghetti Sandwich

  Ever tried a spaghetti sandwich? Well now you can, at S’ghetti To Go, a small eatery in Layton’s Fort Lane Shopping Center, near WinCo Foods.

  “At first, nobody knew what it was, but as word of mouth spread, it’s possibly our most popular sandwich,” said owner Tina Parker. A few weeks ago, I interviewed Parker for a Standard-Examiner story and learned more about this hearty carb-filled combo.

  It starts with ciabatta bread, spread with garlic butter. Then you can add either habanero bacon jam, or balsamic onion jam. Although they’re called “jam,” they are savory spreads, not sweet. Most customers choose the habanero bacon flavor, which has a bit of heat.

  Then comes the spaghetti noodles, bathed in your choice of sauce — marinara, Alfredo, Al Mary (a mix of Alfredo and marinara) or Al Pesto c (a creamy mix of nut-free pesto with Alfredo).

With spaghetti only, it sells for $8.50. For $1.75 more, you can add 2 ounces of meatballs, chicken or sliced spicy Italian sausage.

  This sandwich — or any other sandwich — wasn’t on the menu when Parker opened S’ghetti To Go a year-and-a-half ago.  She wanted to keep things simple and easy to execute. Spaghetti with a rich, classic marinara was the main focus.

  “I didn’t want a complicated menu where customers might have a hard time deciding what they want, and I’d have to carry a lot of product,” said Parker.

  Today, she still only serves one type of pasta —spaghetti noodles — “because I didn’t want a ton of waste.”

   But she added more sauces, and later decided to add a meatball sandwich. While attending food shows, she and her husband, Chris, discovered the balsamic onion and habanero bacon jams. They realized it would set their sandwiches apart from other places. Then, they came up with the idea of a spaghetti sandwich.

   In a future menu expansion, Parker plans to add spaghetti-in-a-cone. Her daughter saw the idea on Tik-Tok, and it’s apparently popular at fairs in the East, she said.  Parker’s version starts with a flatbread, spread with garlic and light cheese, rolled into a cone, then stuffed with spaghetti noodles, meat and cheese.

The eatery is “to-go” only. No tables or other seating. Besides individual meals, the restaurant offers family-size dinners for takeout.
