Easy Dinners Class at Love To Cook Store
I’m gearing up to teach a class on “Easy Entrees” April 5, 11 a.m. at the Love To Cook store in the Newgate Mall in Ogden. I’ll be doing four different dinners that each take about 20-30 minutes to prepare, with a minimum of peeling, chopping and other prep work. (Sorry, but peeling and chopping have never been my thing!) It’s nice to have a few new ideas that you can throw together quickly.
Thai Peanut Linguini- (in the above photo) This is a vegetarian one-pot meal, with a savory peanut sauce and snap peas, spinach and red bell pepper to add color, crunch and nutrition.
Pecan-Crusted Maple Salmon with Roasted Asparagus – An elegant spring menu with very little prep work.
Sweet & Spicy Pork: This is a riff on the popular Cafe Rio Sweet Pork, made with quick-cooking pork chops to cut simmering time from hours to minutes.
Chicken Cacciatore: Also known as “Hunter’s Stew,” my version of this Italian favorite uses small shortcuts to come up with big flavors. The results are a robust tomato-y sauce studded with mushrooms, artichokes and kalamata olives. (The recipe comes from my cookbook, Soup’s On!)
Everyone gets a generous sample , so you end up with a pretty nice lunch. The classes are $20 per person, but the store is running a 2-for-1 special if you call the store. Details are on the Love to Cook website.
