Utah’s Own Breakfast Casserole
I know a lot of people who serve a breakfast casserole on Christmas Day — usually a combination of scrambled eggs, cheese, bacon or ham, and hash browns or bread. Prepared and refrigerated the night before, it’s a better way to start the morning than raiding your Christmas stocking for treats. The casserole was immortalized in the Christmas-themed movie, “The Family Stone,” where Sarah Jessica Parker ends up with egg on her face, literally.
I’m not a big egg-eater, so a breakfast casserole hasn’t been one of our family’s traditions up until now. But, I’m going to do it this year. My son Eric and his new wife will be staying with us, and her name is Sarah Jessica (now Phillips). We’ll make sure she doesn’t wind up like the other Sarah Jessica in the movie!
If you want to use Utah products for your breakfast casserole, here’s a recipe that was given to me by the reps for Oakdell eggs, Heber Valley Artisan Cheese and Winder Farms. I’ve never seen a breakfast casserole with cottage cheese and green chiles in it. I haven’t tried it yet, but if you do, let me know how it turns out for you!
Utah Christmas Morning Breakfast Pie
12 OAKDELL eggs
1 Cup WINDER DAIRY 1% or 2 % Milk
1 Cup WINDER DAIRLY Small Curd Cottage Cheese
5 Cups grated HEBER VALLEY ARTISAN sharp cheddar cheese
5 Cups thawed country hash browns
1/2 lb cooked and crumbled sausage
1/2 lb cooked/crumbled bacon
1 med. yellow onion
1 – 4 oz can green chilis
1 tsp salt
1 tsp pepper
Brown sausage and bacon with onion. Combine all ingredients.
Spread into 9 x 13 pan, 12 inch dutch oven OR 2 – 9 inch pie plates.
Bake @ 350 for 1 hr 20 min.
**Make it the night before, on Christmas Eve in a big bowl and refrigerate. When the kids wake up, preheat oven, pour in pan and put it in the oven. By the time you are done unwrapping presents, it’s all done!!!
