Sweet Corn Pudding
1 cup whole sweet corn 1 cup creamed corn (blended corn) 1/4 cup corn meal 1/2 lb. Butter 1 Qt half/half Salt to taste Granulated sugar to taste
- brown whole corn in sauce pot with 1/4 lb. of butter - add creamed corn and reduce until dry - add corn meal and stir until evenly incorporated - whisk in half and half slowly and continue whisking until it comes to a boil - reduce heat to a simmer and add remaining 1/4 lb. of butter - season to taste with salt and sugar - continue whisking until corn meal is completely incorporated and pudding is smooth with desired consistency
