Park City chef Seth Adams of Riverhorse on Main is scheduled to appear on NBC’s TODAY Show on Monday, Aug. 18.

Adams will be cooking up one of his favorite and dishes on the show’s TODAY Kitchen segment: Crab Cakes with Utah Sweet Corn & Avocado.

Last year, I met Adams while helping Kathy Stephenson of the Salt Lake Tribune with the annual  Association of Food Journalists conference. Riverhorse on Main was the site of AFJ Taste of Park City event, where a number of Park City chefs wowed food writers with their cuisine last September.

“This is such an exciting opportunity for me and for Riverhorse,” Adams said in a press release. “TODAY is watched be millions of people every morning – it’s going to be a great way to get our name out there, and it’s going to be a total blast, too.”

Adams likes to combine an array of  local ingredients and world renowned flavors from macadamia-nut-crusted Alaskan halibut to Rocky Mountain rack of lamb, Italian prosciutto-wrapped figs, and buffalo tartare.

Riverhorse was one of only 152 restaurants in the world to be named a Four-Star destination by Forbes; one of only 800 in the world — and the first in Utah — to receive a DiRoNA award for “Achievement of Distinction in Dining;” the recipient of Four-Diamond awards from AAA; and a “Top Choice” award from Vacation Roost.
